Dehydrating Sweet Potato

A few weeks ago I tried dehydrating some sweet potato to take as a carb snack bushwalking.

I tried:

1. Peeling sweet potatoes
2. Cutting into 3mm slices
3. Boiling for about 5 mins then removed
4. Blanching in cool water
5. laying slices on towel to pat dry
6. dehydrate for 10 hours.

They came out tasty, but still a bit chewy, and not as crisp. I think if I left them dehydrating longer they might have come up crisper.

My googleing has shown some people season the sweet potato before dehydrating. And some not boiling the sweet potato before dehydrating, and someadding oil for crispier chips. Has anyone here done this? Any tips or recipes?

I don't think you will get them crispy. The crispy dehy veggie chips are freeze dried. Very different process. I reckon you'll get more of a leather/jerky product. Maybe try roasting then mashing and spreading it out like fruit leather.

Iv'e had a similar experience with SP. Have you considered mashing? lay it out in a puddle?

Been pretty dense, crispiness probably won't come in unless you really thin down the slices with this treatment.

I do Apple chips just peal, core and slice to 3-5 mm I then lay out on dehydrating racks and spray them with a mix of 2-1 lemon juice and water, flip them all over and spray then dehydrate for 2-4 hr. I normally flip them at 1-2 hr , once they have had no more than the 4 hr I let hem cool for 15 min or so and then store in an airtight container. You should have them snap like chips when you eat them, the last time I did 12kgs and they stared crisp for 2 months because we had eaten them you then.
We like the Granny Smith when making these, also if you are peeling a large quantity a cordless drill and a 12-15mm spade bit are the easiest way I have found.

I don't peel my apples and don't put lemon juice either and they don't brown much. I just core and slice to about 3mm
