Walls is always sensible, as long as you have the gear and sense to be able to cope with whatever the weather gods throw at you.
There are also any number of walks you can put together to explore parts of the Central Plateau and the less frequently visited sections of the WoJ: Lake Fanny Track, Higgs Track, Western Creek Track, Blue Peaks Track, Rinadina/Long Tarns, etc.
If you want something a bit quieter and rougher than Freycinet, consider Douglas Apsley and the Leeaberra Track, although there are transport issues with that one, as it's one way only south of the Nicholls Cap turnoff.
Easy off-track options on Ben Lomond.
Cape Pillar and part of the Tasman Coast Track.
Put together some tracks at Mt Field: Fenton, sidetrip to Field East, Webster, Twilight, Newdegate, around to K Col, sidetrip to Field West and Naturalist, maybe another to Florentine, back via Rodway.
Into Pine Valley, maybe a daytrip to the Acropolis, then up to the Labyrinth for a night. Lots of options from there but be careful with the conditions.
