Everything I read though says Verizon has the best coverage. I was thinking of either just getting a verizon dongle and doing everything over the internet or getting a cheap verizon phone from walmart.

I survived with AT&T.
Be careful of other carriers, I remember someone complaining about coverage when they used another carrier who was meant to be piggy backing on Verizon/AT&T and had terrible coverage. Stick with either AT&T or Verizon.
If you ever need to do something urgently and you dont have coverage some else will have. The Trail Provides.
