Others have posted shots of this spot in the game - but looking quite different.
Head a long way north to get to this place, and a lot higher.

That is good enough.
They are called Cathedral Rocks and are on the rim of the northern basin on Ruapehu.
We were approaching Glacier Knob on the way to the Dome.

Process of elimination as I haven't been there - Somewhere along the Tongariro Crossing route?

Yep that's correct, but not on the emerald Lakes side. From memory it's at or near the Mt tongariro turnoff from the main track... Looking towards red crater area

I'm determined to do the crossing myself at some point (noting often discussed considerations of weather etc).

NZ again, should be easy:

Crossing is worth doing, even with the hoards, but much nicer if incorporated into something longer (less hordey) like the Northern circuit or other parts such as the tracks that make up the round-the-mountain route

Picton it is, eggs. I think the little island is Mabel Island.

No one is biting. Probably wrong but let's start somewhere - it reminds me a bit of some coastal spots on the west coast of the South Island, heading north towards the glaciers (north of Haast).

Tis South Island - but this view is roughly to the East.
But I am not looking at the East Coast.
The coastal section in view is a major NP.
My location is a named area

The location is a _____ Hill Highway, and a nearby attraction is related to the rocks in view.

This is proving a challenge. Very much guesswork, putting 2 and 2 together (and possibly coming up with an answer of 5 ).
Takaka Hill Highway?
So the NP could be Kahurangi NP?
The related feature could be Knuckle Hill?

You get a gong ... for Takaka Hill Highway.
As for the rest ... :(
The edge of Abel Tasman NP is in view. I had a suspicion you might have been there..
The related feature is the Ngarua Caves [the rocks are limestone / Karst]
(The only Knuckle Hill I could find is about 100km away??)

A bit distracted with work etc; the due diligence was less than ideal .
I haven't been to that area yet. Planning to retire in the near future and explore more of these places.
