Grab a 10 tray dehyd off ebay. You can snag for $200, just grab the ones with steel trays. they last longer, easier to clean and wont warp

Another method of dehydrating grapes (much the same for gooseberries i imagine)is to craze them first. When they are cold, place them in small batches in boiling water for the skin to develop fine cracks on the surface.
