Miso soup, cheese, salami and Mountain Bread is a no cook favourite of mine.
Comte Cheese travels well and any Salami that's hanging up in the deli

And nobody has mentioned mashed sardines on crackers so I will.
I add fresh stuff like onion slices or fresh tomato / lemon juice if I have them. The stand-by from the 60's and 70's was pre-made peanut butter and honey or plain buttered bread with honey sandwiches wrapped in wax paper. Keep for 3 or 4 days if not too hot.
If you make a dressing using soya sauce, apple cider vinegar and sesame oil suitable seasoned 2-minute noodles can rehydrate in about 30 minutes and can be eaten cold but I prefer mine hot and soupy. While you would need to keep the oil separate perhaps you could dry the other ingredients?

I've always cooked on a hike - maybe I like the camp having a little gas stove fire for primal reasons?

The development and the range of 'real tasty foods' that are preserved in a bag are abundant.

Cold soaking home made dehydrated tucker is an option as you are eating the food that you enjoyed hot.

A few no-cook dehydes I make for lunches on biscuits/crackers or adding as stir-throughs for cold soaked noodles or cooked; olive tapenade, tomato bruschetta, tuna mix and basil pesto. Normal recipes apply except do not use oil before dehydrating. Add lemon juice on tapenade and tomato recipes, canned white beans to bulk out tuna puree. Dehydrate on tray Irvin oven and crush/blend to powder and keep in zip lock bags. Add water/oil as desired to rehydrate out bush, add extra oil in pesto, mix thoroughly, cut corners of bag and pipe onto cracker/ empty onto starch/noodles. So much flavour and keeps for ages.
