Can anyone recommend a two to three day circuit walk suitable for a winter trip for an experienced walker?

No, doesn't necessarily need snow - in fact I'd prefer not too much snow

Now that the snow season is coming and you'd rather not take the full snow trekking /snow camping kit then Wilson's Prom comes to mind.

Cool - both Wilson's prom and Grampians were on my short-list, so its good to know i'm on the right track (pun intended).
I'm guessing planning for wet weather would be essential for both of those places in July....

Yes wet and fairly cold nights. PCV might help better with the temp range though.

You cannot have a camp fire at the Prom. It will become dark early too. You will need full body thermals and a down jacket plus water proof jacket and over pants.
The Hattah Lakes area and the far NW of Vic. might be warmer and drier in winter. The Grampians are very cold in winter and often there is no view because of low cloud.
